Bit late now to get anything out of the freezer so it will have to be something pasta based. Probably mac and cheese as there's plenty of milk.

Went to find mince in the freezer and can't find any so the moussaka  requested has gone out the window.  Found in our 'emergency drawer' a lasagne to have instead.

I made a 'meatloaf' with sausagemeat (on it's use-by date, bought for last winter festival and not used) onions and Paxo stuffing mix. With roast potatoes runner beans and cauliflower cheese..

Defrosted some mince, so probably deconstructed cottage pie and mixed veg - oh the excitement.  ::)

Google Tamil Nadu mince.  It is usually made with lamb mince, but beef works.  It is basically onions and meat with a dry roasted spice paste including coconut, but you can easily add veg to it.  That was what our beef and pumpkin curry was last night.

If you don't have desiccated coconut, coconut cream can be dissolved in a little hot water and added in, without too much upset to the final result  :)

You lost me at coconut, not for me. The only reasonable place ever for coconut is in a dark chocolate bounty.  :nowink:
