When's the best time to prune a pear tree back thanks

Winter pruning is when you take out excess branches to make an open shaped tree and cut trees back to keep them to a manageable size.  If that is what you want to do, wait a month or so yet.

You want the tree to have dropped its leaves and be fully closed down for the winter.
