I have just made some fudge and it has gone wrong - it's all lumpy and curdled looking. I used a thermometer - it's supposed to reach 116 degrees but it only got up to 105 and it started to burn on the bottom. I was using a heavy based Le Creuset pan. Anyway I carried on stirring trying to prevent more burning on the bottom, but it was still burning so I took it off the heat and started beating. The consistency was all wrong - definitely looks as if the milk has curdled. It wasn't particularly grainy either. where have I gone wrong?
