Blackcurrant jelly
« on: July 21, 2014, 11:06 »
I picked over 8lb of blackcurrant yesterday, 4lb of them have gone to make wine, the rest I have heated and strained to make jelly but my jars will not be ready until tomorrow. Will the juice be ok until then?
I need to prepare the currant yesterday as it was so hot here and I did not want them spoiling.

I still have two more ladened bushes to pick!!

Thanks in advance.

The juice should be fine in the fridge till tomorrow. Or you could decant it into plastic bottles and freeze it. I've done that with my redcurrants as I'm short on time at the minute.
