 Iam about to pickle my beetroot with spiced vinegar but last time the vinegar overwhelmed the beets-can you dilute the vinegar a little with water-the beetroot won t last more than a f/night before we eat it so no need for longevity.ThanksRurh Shaw

I pickled beetroot yesterday, never done it before.  It's turned out fine but I tend to substitute any sort of vinegar with  white wine vinegar, a bit more expensive but I find it's not so overpowering and the addition of sugar to taste also cuts down the vinegar flavour.
Using home grown produce allows you spend a bit more on some of the other ingredients and still come out in pocket.
