courgette jam

hi, I found a great recipe for courgette and ginger jam. sounds awful but tastes great. has anyone tried any other ideas instead of ginger as a flavour?

Peel, deseed and chop the courgettes. 1.5 Kg
sprinkle 500g sugar over and leave for a couple of hours.
after this time put the mixture plus another 500g sugar, a medium piece of finely grated ginger, 1 grated cooking apple and a squeeze of 1/2 a lemon into the pan.
bring to the boil and cook until the mixture thickens.
if you use a cold plate, drop a teaspoon of the mixture on it and leave it to cool,it should be crinkle slightly when it is ready.

Put into warm jars and try to resist for a couple of days before putting it with ice cream, in cakes, on toast, with natural yoghurt and more.
I have run out of courgettes now! never thought that was possible.

I made the courgette and ginger jam last year when I actually had a glut of courgettes (not a single one this year  >:() and my hubby loved it. No one else fancied it tho, but it still got devoured (guess who!)
I also tried using it grated in a cake recipe and it was delicious. I'll look it up if thats any use to you....let me know.
