Garlic scapes you can use as you would garlic, but obviously not crushed. I last used it through greens - yummy.

Chard - the stems need a liitle more cooking than the leaf which you can wilt much as you might spinach. If, for instance, you were stir frying it you'd add the chopped stems earlier than the leaf.

I'm in too much of a hurry with chard, and simply cut off the stems and chuck them into the compost. If I had chickens, I'd give it to them. The leaves are slashed and sauteed in a bit of oil and garlic
