unripe plums?

My neighbour has just given me half  a bucketful of unripe but fully grown plums. (They would be purple if they were ripe).

I have never made anything with unripe plums.

Does anyone have a pickle or jam type recipe for these please?

Could they be greengages?  Cross fingers that they are  :tongue2:

You could ripen them at home, or at least some of them

I've made lovely jam from what turned out to be unripe damsons. They took a bit longer to stew and I added a bit more sugar, that's all  :)

No sadly not  :(  They are off the purple plum tree in her garden.

I just made some Chinese  plumb sauce yeasterday its very spicy and hot just need the duck now

I was looking for a decent Chinese plum sauce recipe this morning and think I have found one, I have most of the ingredients too hand but will omit the chilli as Linda does not like them. I have 3 3/4lbs of plums and 1lb of shop bought nectarines which are just starting to go over, I will mix and match the ingredients to taste as I am diabetic so sugar is a bit of a no no, I have candarel so might give that a go, Dave
Today i will be mainly wearing no trousers
