Potato Glut
« on: January 07, 2008, 19:42 »
I have a glut of potatoes accumulated over the last couple of weeks (bought not home grown!) A box scheme I have just started with pre veggie growing is now delivering this week instead of next week as I thought - any ideas for groovy recipes to get rid of a glut of spuds?!

(and we had bangers and mash at my in-laws tonight so i can't o that for a while!)

Jaye, are they floury or waxy ones? (I'm guessing floury, if you made mash?)

You can freeze mash, or why not get ahead ready for those evening when you'll be so busy diddling with your plants you won't want to cook, and get some cottage pies in the freezer.

Speaking as an Islander brought up on tatties, I'd happily sit down to a meal of stovies with mashed tatties, roast tatties and chips.

Colcannon and boxty would be two Irish suggestions.

Also potato cakes, bombay potatoes, gnocci (I've never tried making this but they are soooo yummy)

Fishcakes! Make them with tinned tuna (good value when they are BOGOF), or fresh cooked salmon. Mix fish with mash, roll in egg, flour and breadcrumbs. I make a big batch at once then freeze for quick suppers.

Part boil some, small splash of oil, freeze individually and then bag up together! When you need them cook them like roasties, just give an extra 10 - 15mins

Wow you guys have some really great ideas - all of you! I feel a bit more inspired now - it's funny how one day you look at a potato and all you can think of is mash or potato wedges so thanks for the ideas!
