Title: steak and kidney pudding

After watching Delia (Smith) I decided to make a pudding cause I havent had one from the chippy which tasted half as good as I remembered in my youth.

Mixed some suet with flour water and I put in an Oxo to flavour the suet...
lined a pudding basin
put in a pound of beef skirt...chopped into about 1/2 inch cubes and a kidney chopped fine.

No water no nothing...Oh except another oxo...just in case the meat wasnt tasty enough.
Put a foil cover on it...and steamed for about three and half hours.

I know its simple but it was the best ever... didnt need any liquid.. :D

thats one of my faves. the wife doesn't like suety pastry though so its a rare treat.

My nan used to wrap them in rags to steam them. Now they were terrific puddings, bit of vinegar salt and white pepper.

ahhh, drifts off down memory lane.

I never make steak&kidney pud my hubbie does and has got quite good,that`s what happens when you are unguarded enough to let slip that my pud was not as good as his mothers.(I wouldn`t mind so much if I hadn`t suffered said cooking for years with a polite grin plastered to my face)

Bacon and onion is good, I never weigh this out just chuck it in but next time I make it I will,


SF Flour
suet
water to mix
bits of lean bacon
and a large chopped onion
combine the lot and wrap it in tin foil or a clean cloth and boil for an hour and a half or pressure cook for 20 minutes and let the steam go on its own. Serve with onion gravy and greens.

Hayles try leek and onion in your pud with or without the bacon. the leeks give a really tasty touch.  My Mum used to make it a lot at the end of the war when meat was a treat only.

Our local Venison farm also stocks imported Kangaroo meat and after various experiments we found Kangaroo was best done this way, people think we're mad when we say we've had Kangaroo Pudding for tea  :D  Very nice it is too.

can i add a kangaroo treat for ya , get some tail rounds and stew as if you had ox tail with dumplings .blooody loverly with fresh new tatties n early carrots spring cabbage
