Onion squash

Hello,
I don't know if I've done this right, I'm new on here :) Does anyone have any recipes for onion squash? At present I'm cutting them thinly and then roasting them in a little oil for about 30 minutes. They seem to grow quite well in our clay soil near Boston, unlike the carrots which refuse to grow downwards in spite of regular ground preparation and composting etc! Thanks.

Welcome! I can't help with a recipe for Onion Squash but I'm sure you won't have to wait long. :)

You can use them in any pumpkin recipe, if you do a search you'll find plenty.

I cut them in half and roast till softening and then stuff with mince rice veg mix seasoned with some cayenne pepper and put back to finish :)

Squash is a very versatile veg as you'll find if you do a bit of experimenting. Some squash is mushy when cooked so lends itself to being mashed without or without potato. If your squash keeps its shape then it can be cubed and used in curry, soup and casserole. Roasted with other veg on trays in a hot oven with onions, garlic, chilli etc it's lovely too   I roast mine in thick wedges and then peel it if making soup with it, but the skin is quite nice, good and chewy when it's roasted  :D 

It can be used for cakes and puddings as well
