Anyone have an easy salsa recipe?  I searched and found a great looking chilli salsa I might try, but wondered if there are any recipes you have for a standard salsa?  Particularly low fat as I have seen that the tub I bought from Tesco is 1 1/2 points for the whole tub which got me to thinking about making some.

I thought all salsas had chilli in  ???

My basic recipe - chop all pieces the same size as it looks better.
Skinned, seeded tomatoes, chopped
Coriander, chopped,
chili, chopped
Green pepper chopped
Lime juice


Tin of black beans
Sweetcorn
Tomato (as above)
Green pepper chopped
Chili
Coriander
Mint
Lime juice

The colours of this one are lovely together.

I do a rustic salsa by chopping fresh tomatoes quite small, same with red onion and a chilli or more than 1 if you have large quantities or like it hot. Add chopped fresh coriander, freshly squeezed lime juice and a splash of olive oil. Season with salt and freshly ground black pepper. Best made an hour or so before you want to use it, store in the fridge if you need to make further in advance, but I wouldn't keep for more than a day.

We have this time and again during the warmer months when all the ingredients are available.

D'oh, thanks Argyllie forgot the red onion.  I also use olive oil but you don't need to.
