I have tried scapes before , stir fry, but I am not sure how much you cook i.e. do you cut the whole flower stem and cook that or just the "scape" or flower bud?       Any recipes etc greatly accepted.

I used all of the flower bit and some of the stem chopped finely in a mushroom and garlic risotto.

I blitz the whole lot together and make a scape pesto

scapes, grated Parmesan, olive oil, salt, pepper.. Wizz, done

I like the sound of the pesto.   I put them in a french bean dish.  I used up some of last year's French beans from the freezer.   Just fried some pancetta cubes in butter with the scapes, added the beans, stirred them round a bit, then added a spoon of cream and some chopped parsley.  Yum.

Do you just use the flower head or the entire stalk?

for the pesto i use it all.... I miss the pesto this year as I forgot to buy some garlic last year
