Elderflower cordial query
« on: June 02, 2020, 11:54 »
Hi, Thank you for letting me join the group.
I have just made some elderflower cordial. I sterilised all my equipment and bottles. I have stored in fridge but after several days strange cloud like shapes have formed, is this normal or is it some form of bacteria growing? I’m not sure if I should throw it or can I remedy it.
Thanks in advance for any information or advice.

It could be pectin haze, especially if your recipe included citrus fruits.  It happens in elderflower wine sometimes.

Look it up and see if it looks similar.  You might have to google images for elderflower wine rather than cordial.  It doesn't make things unsafe to drink, just spoils the appearance a bit.

Mines also got what looks like spit floating in it. However I know there’s way too much sugar in it to have any issues with bacteria

Just seen this...

There's a condition in making hooch, called 'ropey wine', which has a similar characteristic to what you describe!

My wine 'guru' told me that he'd seen it only once, and the way to solve the issue is to simply pop in a couple of crushed Camden tablets, and give it a good shake up! The dead cells drop out, leaving a clear bottle!

Of course, by now you may have finished it all anyway...
