Whenever I start Brassicas off in the greenhouse they wilt and die off - almost as though the heat and sun was too much.

I find the same. I germinate them in the greenhouse then as soon as they show their heads above the compost move them into the coldframe. Seems to work much better and their hardened off earlier so can go to the allotment.

The second lot this year are in my utility which is a bit darker and I would think a bit cooler as my greenhouse has been so warm lately - even on the coldest days.

You are most probably right... my little leanto greenhouse gets loads of sunlight but, when I sowed mine temperatures were much lower than they are now. My brassicas have been in pots outside for quite a few weeks now.
