Is it because they lose juice on defrosting and the sugar goes with it?

I tend to freeze on trays, then bag up, so fruit stays in individual pieces rather than a lump.  It seems to damage it less and it defrosts really fast.  I chuck it frozen into dishes to top with crumble or pastry and use it semi thawed in fruit fools and mouses.
