Blackcurrants

Still got a load of blackcurrants in the freezer ( and a cupboard full of jam ! )

Anybody got any interesting ideas for how to use them?
Playing all the right notes but not necessarily in the right order!

This was my competition entry. You can use blackcurrants instead:

Real Fruit Jelly

Using any mix of berry fruits, just cover them with water and simmer gently for 10 mins with enough sugar to make the mixture sweet enough for you.

Rub the mixture through a sieve and measure the liquid. Using 1 gelatine leaf per 0.25 pint presoak the leaves for 3 mins and then drain. Stir the leaves into warm mixture til dissolved  and leave to set in the fridge.

I'm using this to use up the raspberries and redcurrants from my freezer.

If you want a slightly different blackcurrant sorbet, try adding the zest and juice of an orange (or more or less, to taste) with the blackcurrants.  It gives the sorbet an unusual, fragrant, taste without overwhelming the blackcurrants.

Try a blackcurrant suace (not too much sugar) with duck Yummy!

thanks I'll try that - never thought of blackcurrant & orange before.

I discovered it by accident: I had a recipe which suggested putting in the zest of a lemon, but all I had was an orange.  Luckily, I really liked the result!

Try googling a recipe for cassis. I've lost my recipe but I think it was vodka, blackcurrants and sugar. Yum.

Also, they make a great sauce to go with Delia's Vanilla terrine in her summer cookbook. She suggests rasberries, I think.

Blackcurrant cheesecake.  Make a normal cheesecake recipe (just a bit of vanilla), and before you cook it, pile plenty of blackcurrants on top so they sink in as it cooks.  Also, if you make the kind that sets in the fridge with gelatine, you can make a blackcurrant-flavoured one from any fruit cheesecake recipe.  Bear in mind that you'll need to add more sugar than with raspberries or strawberries.
