okay a slight exaggeration - but we are starting to look like courgettes :mad:. I am not sure I can face another one... :closedeyes: we have even made chocolate courgette cake. That was weird :wacko:. In a strange way it tasted peppery - is that just me? For those who say that it is a good way to get kids to eat Veg'...well, what about all the other bad stuff (butter, sugar, chocolate, cream cheese...it goes on...). Sorry, this is turning into a rant. Can anyone please suggest something unique to make with a courgette or two? Moreover, a few tips on uses for marrows as well wouldn't go a miss (within 2 days I have gone from finger-sized courgettes to gigantic marrows...x3). I have 30 courgettes to consume within the next week or two (not counting the ones that are still growing)...Thank you!

One of my faves for using up courgettes in one fell swoop - they don't have to be yellow and this is a nice lemony take on them......it's the reason I grow them yellow these days.

I also just use them in every meal I'm making - we are veggies [well, we are when I cook] so they can go into alot of meals. Including roasting them.

Can I ask how many plants you have as you have me slightly worried now as I am currently getting about three a week from the plant in my garden and have three plants on the allotment which are just starting to fruit. I do love courgettes tho and am also veggie so do put them in most things.

Best way to eat courgettes is to crush garlic on, drizzle with olive oil and grill ....... making my mouth water just thinking of it ........ thanks for the tread - guess what i'm having for tea tonight?

I have 9 plants, 6 of which are being incredibly productive...perhaps it's the soil. Not been grown on in 25 years, and it was covered in comfry when we started digging last year.

OH NO!!!it looks like another year of 'a thousand and one ways with courgettes' :lol: well at least something is successful at the moment ::)
i havent done anything very creative with them yet apart from chop them into a rice salad, chargrilled some to have with couscous and sliced them raw to dip into a tapenade type dip my mother-in-law showed me how to make (although i like the sound of making a jam/chutney with them) ;)

i just made some chutney and chucked in my 7 courgettes i had in the fridge, along with 5 onions and 4 cooking apples, vinegar, sugar, ground ginger, salt and ground coriander and simmered til chutney type thickness and potted up - the final mix tasted ok, so in a couple months should be delish
courgettes mushed down nicely too

I did spagetti courgette bolognese tonight, just switched the mince for diced courgette and everything else the same way i would do for bolognese.
Fab, healthy and cheap!!

lots of ideas people - ;) many thanks. I am not sure about putting courgettes in the fridge though - is that a good idea? I always follow what the supermarkets do, so courgettes down at our "local" Tesco hypersuperwoopermarket have them stored at room temperature - I have being doing the same... :wub:

Send them to me, we love courgettes, we could have as many as 9 plants as we have lots of free plants donated by the old boys and we still dont know what they all are.
We use on a normal week about 10, we have them stir fried, in soups, in chutneys, in cakes
We cant get enough of them :blush:

General advice if you're not that keen, one or two plants max.
However courgettes don't like me and in a desperate attempt to generate a glut we have planted over twenty this year, only 4 survive ( like I said they don't like me)
Any way for bigger veg, blanch or boil till almost tender, split , scoop out flesh, keep skins.
fry onion, garlic, grated apple , ( same amount as courgette flesh) untill soft add courgette, cream cheese and stuff skins.
Cook in a hottish ( gas 6) oven for thirty to 45 min ( depending on size)
The best way is to pick very small, use a tempura batter ( on the Internet very very easy) and fry whole , larger fruit can be sliced. We use these as a quick snack.

And I forgot to add , if things get desperate they can be grated into almost anything you are cooking, casseroles, curries, risottos, soups, where they usually nearly disappear.

we did lagsagne the other night using thin slices of quitr a big courgette instead of the sheets of lagsangne and it was very tasty , salt and pepper and cheese each layer then put the meat sauce on each layer as you would cheese on top realy tasty .

We don't have quite 6 million but a fair few which brought me to this website today looking for recipes. I have made courgette and chocolate cake today and also courgette and potato soup - both yummy !!

Chocolate Courgette Cake is weird though yo uhave to admit that? :wub: It went down well at a family bbq in our yesterday (when the weather was sunny 8) ).

I discovered one of my yellow courgette plants, not satisfied with the usual population explosion while I am away for two days, has gone and had Siamese twins!!
Two courgettes laying side by side and joined all the way along their side!
Not a 4x4 but a 2x2!! :lol:

very good :nowink: So, is the 2x2 courgette phenomena common? Sounds like some form of Mitosis process gone wrong...there must be a statistical chance of that happening, but i have never seen it...
p.s. turbo-charged courgette plants still producing at high rate and volume!

I tried a Sophie Grigson recipe the other night - I have NEVER been able to make successful courgette fritters - all that annoying grating to find they just will NOT stick together!
You need:
Flour, cayenne pepper, cinnamon, salt mixed together
Egg - whisked
Fine breadcrumbs
Courgette - quartered lenghtways if small, or sliced if bigger - whatever
Coat in flour, dip in egg, roll in breadcrumbs - fry in oil
Serve drizzled with fresh lemon juice and a big blob of mayo - delish! :) Oh Sophie's recipe had parmesan in the breadcrumb mix too but I omitted that. You can find the recipe proper if you google it.

I've had double courgettes and squash like that too - strangely enough, they were both yellow varieties ::)

Ive got a spare shelf in my oven while im cooking tea so thought would use up some more courgettes and roast a few baby ones to go with tea.
Ive im going to brush them with garlic in olive oil then put them in oven anyone suggest anything else for them to be cooked in? keeping it simple. Just feel like it needs something else but ot sure what.

breadcrumbs mixed with grated parmesan and sprinkled over..................gives them a bit of texture :)

A quick easy peasy way to get rid of some extra courgettes.....one I made up last year...
Par boil courgettes for a couple of minutes.
Put into a gratin dish, cover with double or single cream generously, add lashings of black freshly ground pepper and a small sprinkling of fennel seeds.
Bake for about 10 mins on 180 degrees C
Good as a side dish with roast chicken

My mum used to make marrow & ginger jam when i was a kid - slightly stringy, but good flavour!
Re courgettes - I find anything mixed with bacon tastes good - you could try layering them with bacon & pasta sauce, topped with cheese & finished in the oven or under grill?

on a funny courgette note last night chris rushed up to the plot to check all was ok, he saw two courgettes ready and thought I'll grab them, which he did, he didnt have anywhere to put them so he stuck them in his pockets

We've been wading through courgettes for the last few weeks and are still LOVING them!! Here are a few of our fave recipes......
Pasta sauce - thinly slice, slowly sizzle with some crushed garlic and olive oil. When all nice and mushy with a few brown bits add a few glugs of cream and grated parmesan. Yum
Baby courgette flower thingys - Pick some baby courgettes with the flower still nice and fresh. Gently take any slug, bugs, flies or pollen from inside the flower. Stuff with whatever to hand - i used packet stuffing but some cheesey/mascapone/ breadcrumby/riccotta/spinachy/oniony mixture would be nice. Dip in batter (tempura sort v.nice) and deep fry. These are tasty, tasty, tasty!! You can do it with the male flowers as well, but i have sooo many courgettes i'm happy to eat some as babies and they are sooooooo good.
Polenta courgette slices - Slice courggette, coat in polenta/maizemeal and deep fry till golden. Dip in home made mayo, mmm, mmm, mm!
Lemony courgettes - Braise slices in olive oil, garlic and lots of lemon juice. Chuck some mint in at the end. Eat with bread to mop up yummy juices.
Courgette pasta strips - Use your potato peeler to make long strips of courgette. Drop in boiling water for a few seconds until softened. Use like you would pasta with your favourite sauce (..ok, the pasta sauce above would be a bit tooooo much!) something with a lot of gutsy taste like a nice rich tomato sauce.
I'm liking the idea of courgette and lime cake. And the baked dish.
Thinking of it, with Courgette soup for starter, gratin for main and courgette cake for pud there is a whole dinner party. Who's for an invite......! :lol:

Picked up the AS*A magazine this week - they have 4 courgette receipies, cake, pancakes, something else and a tart..... worth a look

My partner worked out a very tasty courgette recipe similar to the type of thing you would find in a deli.
First chop a chilli and or garlic to taste and put it in a jar, then top up with oil - the amount you use and the type of oil depend on your personal tastes. We used one smallish, medium heat chilli and corn oil. Shake it up and leave it to infuse for a day or two.
Slice courgette longways thinly (halve it first if it is long), into slices about 1mm or so if you can get it that thin! Use the infused oil to shallow fry your courgette until slightly browned on both sides. (Use a griddle pan if you have one.) Put aside any you don't eat immediately and continue frying until all courgette is used up. Finally, fry your chilli and/or garlic until starting to brown. Set aside.
Place the remaining courgette in an airtight container, then top with the chilli/garlic and add the rest of the oil. Top up with plain oil if necessary to cover it all.
Stores well in the fridge, yummy on its own, in sandwiches or on top of rice cakes / bagels with cream cheese etc. I can't tell you how long it will last as it got eaten quickly, but was fine a week later!

I made courgette & dill soup and courgette pate on Saturday, had courgette & pepper sausages yesterday, swapped one of my green ones for someone's yellow (not really what I had in mind when I offered to swap stuff), gave some away at work and to friends and am thinking now I'm going to put some on my front wall at home and tell people to help themselves! I still have about another 100 I reckon before the season ends, although am just starting to get patty pans and yellow scallops, my grisette & tromboncino are the favourites and I'll just do them next year

I made a lovely curried courgette soup last night, my son absolutely loved it and he doesn't like courgettes.
I also make penne carbonara cutting the courgettes to roughly the same size as the penne and then frying off in olive oil and pancetta stir in the cooked pasta and then chuck in the cream and egg yolk and loads of parmesan. Lovely! x
Oh, and another good one is to pickle and marinade them, which is a hubby favourite, he likes them on his salad.
Come to think about it I'm not sure why I keep moaning I have so many :D
