How to Cook Salsify

OK, I've grown some salsify, eaten it in France but never cooked it. Did a google search but they all seem to be complicated recipes.
So has anyone cooked it and can they suggest how? Please  :)

According to my "Complete Vegetable Gardener"...

You should cook the roots before peeling them or you'll lose their delicate flavour.  After peeling, serve the cooked roots with melted butter and lemon, or you can add them to soups or stews.

It doesn't actually say HOW to cook them though - I assume to boil or steam?  All in all about as much use as a chocolate fireguard!

treat the same as carrots/swede/parsnips etc.not sure about pealing it though i think there wont be a lot left if you peel it just a good wash
feed the soil not the plants
organicish

That explains the bit about cooking then peeling in some recipes.

I think I'll try them steamed and gently peeled with lemon and butter - thanks :)

They were wonderful in France but I couldn't pluck up the courage to ask how they were cooked, my French being somewhat poor although I did have a conversation with the chef later that week at a party - amazing how a drink enables you to speak French!  - but the salsify didn't come into it.

I found a reciepe for salsify patties in The Heligan Bible,in it you cook the roots in water with lemon juice in to prevent discolouring for 30-40 mins then rub skins off.For patties they mash with butter and cream and lemon juice,chill,dip in egg,roll in bread crumbs and shallow fry until golden brown.
  I`ve never seen salsify for sale in this contry so growing will be the only way I will get to try it,now where can I squeeze it in?
