I really should have left the carcass til tomorrow:

I've simmered it down, but now i'm left with two pans of hot liquid- too hot for the fridge?! and its gone midnight.

Any suggestions?

If you left it in a cool place overnight, it should be fine.

have you got a garage or shed???  or decant into clean milk cartons and leave outside with lid firmly screwed down
