I have never been very good at this task.  How do you stop the earth toppling back in ?  Is there something I should know !!!  Mrs Bouquet

Do it after a torrential rain spell or soak the soil well and wait for a few hours for it to seep down and dry a little.
Depends on what you are doing with your hole.
If its leek planting, you want it to be just damp when making the holes and not too soggy, otherwise topping up with water makes the holes a soggy mess.
