I made some mead about t18 months ago and it turned out fine,

I'm currently interested in making Metheglin but only with rosemary, I can’t find anything concrete about how to make it.

Some recipes say to boil your chosen spices and herbs then strain and add the liquid to the honey other recipes mention leaving the spices and herbs in the demijohn until the first racking.

Does anyone have any experience of making Metheglin and which method would be best?

Its the same as adding hops to beer. If your boil the herbs you will get a stronger flavour, if you just leave the herbs in you will get more of an aroma.
Try a little of both.
