To celebrate the much underrated gooseberry - I give you :-
STICKY GOOSEGOG CAKE
an unusual cake with a sticky 'toffee'' topping contrasting with sharp gooseberries
Stage 7 & 8 need careful handling but the added yoghurt makes for a more substantial mix which is less inclined to sink
INGREDIENTS
125g Sugar for the topping
75g Butter 300g Gooseberries, topped & tailed
75g Natural Yoghurt 25g Butter
2 Eggs 5 Tbsp Golden Syrup
150g SR Flour
METHOD
1. grease/line a 9in x 7in baking tray and pre-heat oven to 180C
2. cream butter & sugar
3. add yoghurt & 50g flour & mix well
4. Add eggs and remaining flour and mix well
5. Pour into baking tray and put in oven
6. melt butter & golden syrup and stir in gooseberries to coat in mixture and allow to cool slightly
7. After 20mins cooking carefully remove tray from oven and pour on the gooseberry mixture and spread out
8. Return carefully to oven and cook for a further 30 mins till gooseberries are starting to brown
9, cool in tin for 10 mins then transfer to wire cooling tray
Enjoy warm with creme fraiche or cream or cold on its own

Thanks for that, my eldest has just discovered a gooseberry bush (wonder if it has babies underneath :blink:) in his overgrown garden, so as soon as they are ripe I will try this :D

Think I will have to try that out when mine are ripe. As you say, a much under rated fruit.

Works best with gooseberries that are green and sharp - contrast with the 'toffee'
