Just harvested three beetroot, which had quite large horizontal cracks in them.  What I salvaged was still delicious but I'd like to avoid this happening with my various later plantings.  Any ideas?

I find that regardless of how deep I plant the seeds that the roots always pop out of the ground a bit. How long before you pull? It's mostly a matter of what size do you prefer to eat them at so just have a look. I mostly try to do a thinning when they're a reasonable size, or pull the larger ones before they become monsters. If your roots are buried, pull back a bit of soil by hand for a look.
