Leek pesto...
« on: February 17, 2013, 17:44 »
Just to say folks, that I've found a way to use up spare leeks, and it's planted in the recipe section!

What is this concept you speak of, "spare leeks"?   :(

[Ta.]
I try to take one day at a time, but sometimes several days all attack me at once...

Good question, Yorkie...

We've got so many still in the ground, and they'll deteriorate if we're not careful, and looking at recipes here and elswhere,we thought we'd try a new way with the chaps!

Baaah goom, it tastes fan-blasted-tastic!

That's odd, BtB, as I can't either!

Try this anyway: -

3 or 4 good sized leeks
three cloves garlic
half a cup of grated parmesan cheese
two tablespoons of olive oil
5 brussel sprouts, or the same amount of any brassica

Generally, mash it or blend it until a paste, some people lightly cook the leeks first, but I like the crunch so I didn't! Serve as a relish or mixed in with pasta etc. It's great with a salad as an alternative to pickle etc!

And it freezes well too!

Likin' the sound of that winter pesto Growster

Thanks a million  :D

As I have around 60 leeks still in the ground, every little extra use helps me avoid having to freeze them in a couple of weeks  :nowink:

You're very welcome, KC!

I'm not generally I/C cooking at 'The Turrets', but at this time of year, there's still quite a lot in the ground, and the freezers are full of soup (about 790 gallons at the last count), so I reckon it's worth trying out some other ways!

Mind you, the chard has restarted, and that is a welcome sight!
