pickling cucmbers

I have far too many cucumbers, and not enough gherkins. Can I pickle baby cukes in the same way as gherkins?

Yes you can. I sliced some up lengthways as they looked a bit big next to gherkins.

I chop mine into small dice with 1/4 amount diced onio put into jars and cover with a sweet pickled vinegar. Add a spoonful of mustard seeds for a bit of kick.
Lovely on a cheese bitty.
