Title: Blackberries from Brandy

Hello All,

I am new to this forum but I think I am really going to enjoy it.

Does anyone have any ideas what to do with the Blackberries used to make blackberry brandy?
It seems such a waste to throw them away. They have been soaked for 12 months so are a pretty yuk colour!!

Mix them with some apples and a few fresh blackberries and top with a sponge mixture and bake or a crumble topping.

mix with some fresh ones, liquidize, sieve and sweeten and use a sauce for ice cream or if you make your own ice cream use it to make a ripple through vanilla ice cream.

make a ring cake using polenta in lieu of part of the usual flour as per below:

In the bundt tin, put an inch layer in the bottom all the way round,
THen a ring of your blackberry gunge all round (down the middle of the cakemix layer)
Another layer all round of cake mix, another stripe of gunge all round and finally the rest of the cake mixture.
Before putting into the oven, push a spoon handle into the mix, right to the bottom, and run it round the ring, roughly swerving it around as you go (to marble the blackberry gunge into the cake).  Then bake in the usual way;

the recipe:
175g    polenta (cornmeal)
75g    plain flour
½ tsp    salt
1 tsp   baking powder
175g    unsalted butter
250g    caster sugar
4    eggs
1 tsp   vanilla extract
125ml low-fat natural yoghurt
method:
Preheatt oven to 180 C / Gas 4. Grease your bundt tin (at a push use a standard springform but looks the business as a ring)
Sift together the polenta, flour, salt and baking powder, set aside.
Beat together the butter and sugar until light and creamy. Beat in the eggs, one at a time, then stir in the vanilla.
Add the dry ingredients alternating spoonfuls with spoonfuls  of the yoghurt, stirring well after each addition.
Pour the mixture into the prepared bundt tin as described above then bake for 45 to 50 minutes in the preheated oven, until a skewer or a knife inserted in the centre comes out clean.   Check after 30 minutes and if the cake appears to be browning too quickly, cover for the remaining time with a loose lid of kitchen foil.
Cool in the tin for 15 mins then take out and set onto a wire rack to cool fully.

(works well with most soft textrure fruits)

Nice with cream, ice cream, or on its own, warm or cold.  Even with custard if you really  must.

Mix them into softish icecream and re-freeze. the alcohol stops the icecream from having a very hard set, but it is certainly delicious.

Love the polenta cake idea hamstergbert  :D :D

Hubbie particularly likes the idea of the ice cream one.
