Adding new chillis to chutney...

I made quite a lot of chutney last year, and of course some of the jars are still lingering!

This year has been pretty good for growing chillis, and we have a glut, so what does the team think about adding them to last year's concoctions?

The 'Thai Dragon' blow your head off, so might just spice up the old stuff, but how should I do it? Do I simmer them for a while or what?

You'd have to tip out all the old jars and bring the contents up to the boil, with chilli additions, simmer to cook new chilli and then pour into re-sterilised jars and lids.
Only you, and Mrs Growster, of course, can decide if it's really worth the effort  ::)

I guess you're right, Mum, is it all really worth the hassle of all that!

We had six chilli plants on the go this year, and I just want to make sure they're used up...

How about just making some chilli jam and adding that to the other stuff on the plate? Should work, shouldn't it?

Are they dried or fresh chilli’s? I’ve seen a recipe for something called cowboy candy that I fancied making with the last of my fresh chilli’s  :) have a gurgle & see if it appeals  :)

The peppers we have are a mixture of Cayenne, Apache, Thai Dragon and a couple of ordinary capsicum types, so why not a meld of the whole shebang!

And a whole jar can go for 'snacking'! Blimes!

Je ne will faff about avec a reboilement de le chutney de 2020!

Bull taken by the horns and a small bottle of red wine vinegar, pound or so of light brown sugar, eight garlic corms, two tablespoons of ground ginger, quarter of a pound of chopped chillis of various heat arrives at a pound and a half of this...

As Ma Larkin says in 'The Darling Buds of May', (the real version with Pam Ferris, not the latest stuff), 'This'll grow hair'!

Just as an aside, for yet another batch, I took a large jar of two-year old damson jam, added about fifteen chillis, (previously softened in garlic and chilli oil), added a small amount of the jam to a blender, chucked in the chillis, whole, and zapped the lot...

While it's now the consistency of HP sauce, it really does 'grow hair' I can tell you!

It won't lasy long enough to worry about preseving, as Elder Daught is on the warpath for a refill of the last lot...
