Title: Pie with apple.

I shall call it - apple pie . Do you think it will catch on ?  :tongue2:

This was pretty close to right lacked a little cinnamon and just the sharpness of a green cooker, 7/10.

MMMM, cream, custard or icecream to go with it?
I'm making one tomorrow and I have some quince to go in with the apple  :)

It was still warm from the oven MoS so had to be eaten 'au naturel'. I have both custard and posh almond ice cream for tomorrow  :tongue2: if it lasts that long.

Not sure I've tried an apple and quince pie, I think you might have to send me a slice so I can be sure it's acceptable  :D

Going to have to give this one just 4/10,  apple puree in a pastry doth not a pie make.  :mad:

Bramley's so it tastes nice enough, it's just not right Oh dear what a shame I will have to keep trying.

Did you cook the apples first Lardman? - I don't as the apples seem to hold up better IYKWIM

Uncooked and untreated. I even left them in rather large slices to see if that would hold up better, the lumping you can see in the lid were the apple chunks  :tongue2:

I have a feeling to get what I want I'm going to have to mix the apple types unless someone knows an acidic cooker which retains is shape that will grow up here (not granny smiths).  :unsure:

Thought - perhaps the oven is too cool and a hot oven for less time would be better ?

Around 180, no fan until they looked cooked, Im guessing it's 30 mins or so.

I gurgled and the answer seems to be - and you won't like it - use some Granny Smiths in the filling as well as the Bramleys  :lol: :lol:

You're right I don't like it....   ::) if it was easy it wouldn't be fun would it  :D I  have a few more desert apple varieties to try in the mix as long as there are some bramleys left after the winds  :unsure:

The wind blew most of the bramleys down onto the pavement and they shattered  :mad:  must have been 50-60lbs easy with each around apple around 1lb.  :( such a waste. I grabbed a carrier bag of what was just bruised and made 10pts of puree so all's not lost.

Pie the third has a mix of bramley puree and fresh jonagold with a sprinkle of cinnamon. Taste was about right for a sweet pie, nice balance of sweet / sharp and filling was more filling than puree which gave it good bite - 7/10.

There's a lot of juice, I don't think its from the puree I didn't add any water to it and the last pie wasn't like that so the jonagolds must be pretty wet. Pie the fourth with need a sprinkle of cornflour to sort that  ;)

My pie with apple and quince used a recipe where you mixed the sliced filling with cinnamon, sugar and cornflour.  You could skip the sugar for apple if you want it sharp, but quince is so sour it needed it.  You could coat the apple and then stir in the puree  :)

Most of the recipes from over the pond do the same (and they look like they know a thing or two about apple pie)  ;) I can't say I grow quince, I have a vague memory of them being too floral for my taste but I may be thinking of something else.... 

I prefer a sharper pie but ML liked it, especially as all the apple juice soaked into the pastry bottom overnight. I'll try with a sharper desert apple something like tupstones or winter king next I think, perhaps they'll be less wet too.  It's a dirty job but someone has to do it.  :tongue2:

apple pie lovely grub with either ice cream or custard and nice home made pastry I've asked the wife if she could make me one for our dinner  tomorrow


my wife made an apple and pumkin pie when our kids where at home they said this is nice my wife replied yes its apple and pumpkin needless to say the kids would't eat eat it and the wife never cooked apple and pumpkin pie again till the kids left home  :D

It's particularly annoying as I'd tried to pick them with the pole picker earlier in the week but they weren't ripe enough to come off  :( The tree is 40 years old if a day and a 1lb apple falling 30ft onto concrete doesn't leave a lot of salvage. I'll try again with the pole picker next week but not for mincemeat, I still have a tub of Mrs Bee style in the fridge from 2013? waiting to be used  :blush:
