Wow, mumofstig. Even though I normally give things you have to sign up to a wide birth, I just had to get the book they're offering. Stilton, apple and almond pie sounds amazing...

They make it with shortcrust, but to be honest I quite like the idea of puff pastry. Can you think of any reason why it wouldn't work? I can't, but I'm not an expert on pastry, so there may be something I haven't considered.

I didn't .. I've been so caught up in international women's day  :lol:  Not made a pie (or anything) for ages... I really should venture into the kitchen again.

They make it with shortcrust, but to be honest I quite like the idea of puff pastry. Can you think of any reason why it wouldn't work?

Might be a little rich with all the butter and cheese  ;) but there's really only one way to find out - make both  :tongue2:

OK. Good advice. So, I'll cut down on the cheese and add some leek instead. Even better. And perhaps chopped walnuts instead of almonds... Where's the greedy emoji when you want one?!
