Plum jam problem - any help appreciated!

Hi there, new to this forum so hope you will be kind and help me out! We have two plum trees at our house, moved in last year and had tons of plums. Made 30 jars of preserves and most of the plums were left to rot!

The problem I have is that my jam tends not to have a very plummy flavour, just generally sweet and fruity-ish. Does anyone have any ideas on how I can improve the plum flavour and produce a less sickly jam?

Also any other plum recipes welcomed - we got sick of plum cake after a while!

Strangely enough, my jam hadly ever turns out well set, but the best one I've made in 2 years was the plum!!!  :)

I like to add quite a lot of lemon juice to plum jam, makes it a little 'sharper' and improves the set. :)

1. Plum and Orange Jam - use the zest and juice ( best with organic oranges )

2. Spiced Plum Jam - use cinnamon, cloves and allspice to taste
This can also be whizzed up with some vinegar to make a wonderful Spiced Plum Sauce
Playing all the right notes but not necessarily in the right order!

Plum tart is good. Part bake the pastry blind and then cover with halved, stoned plums ccut side up, brushed with melted butter and a sprinkle of sugar. Sometimes I put skinned almonds in the stoen holes, and then bake until plums are bubbling  :D

I usually make "plum cheese" where you rub the pulp through a sieve instead of stoning the fruit although one time it set so well that I had trouble getting it out of the jar :lol:

I have made a plum jam that has nuts through it.  Will try and find the recipe.  It didn't set particularly well but tasted just beautiful.

I have also stoned and halved some plums and kept them in the freezer till I was ready to use them.  It's lovely in the winter to take out some fruit, stew it, and pour a sponge mixture over the top.  Serve with custard and it's a great reminder of warmer days.

I didn't grow them unfortunately. Aldi had a special on plums for 49 p a punnet. It took almost two punnets for the recipe I have, as I cut down the recipe I use in half. I know it isn't as nice as home grown plums, but my tree has a few years yet before it produces any plums. :) Made a cake using the rest of the plums yesterday. And this way I get to practice before my tree does produce. :)
