I am sure my grandfather used to build a long wigwam frame out of canes for peas to grow inside a net thrown over the whole structure, but my tall peas always break through the netting and flower outside the net protection.

Now I'm going over to the idea of growing in a triple row with vertical stakes at each corner and using garden string to guide the plants upward. I guess I then throw a net over the whole structure as they grow.

I usually use stakes but with pea/bean netting attached (which I want and now can't find in my shed ) so was thinking of using garden twine. Only trouble is it seems to stretch over time (as does my netting but not as much) so the plants still fall over. Wilko have replaceable stuff for those outside rotary clothes-lines which don't stretch too much either.

I find that it is difficult to remove plants from the netting afterwards. You could to several upside down v and run string along. Think of wind direction.

I find this works for me.  I just use chicken wire for them to climb up then cover the whole thing in netting.  Once cropped they pull off the wire easily.  Then I just roll them up and store for the next year.  I was slow getting the netting on this year hence the birds had a good feed but doing well now.  Not as good as last year but what is.

Ah, I never saw the word tall.  .  I'd probably use 6' batons, pea net and a staple gun.
