I took over my new allotment today - I'm very inexperienced as my garden has only been big enough to grow a few herbs & things in pots!

There are some crops in the gound.  I believe I can leave the leeks and brussels sprouts to grow on (?) but I'm less sure about the other things - carrots, beetroot and I think swedes (but they're very skinny).  Are they OK to leave too, or should I dig them out?

There are also some strawberry plants overgrown with grass.  Should I just weed them or dig them out? - obviously I've no idea how long they've been there.

Welcome to the forum 

Sounds like you have a good plot there, with crops already growing..... all thsoe you mention can stay in so you can eat them when they are big enough.

Clearing the grass around the strawberries is a good idea, but it might be easier to dig up the plants, clear the ground and replant, without any grass in amongst their roots. A good dose of blood fish & bone fertiliser will do them good.

I would be tempted to replant the strawberry bed using only the youngest, skinniest new rootlets and compost the rest.

Use the rest, as you need till spring.
