I shouldn't worry about it, I don't suppose anyone, even with a discerning palate would notice.    ::)     Cheers,     Tony.
I may be growing OLD, but I refuse to grow UP !

the offspring from 2 F1 varieties would be very variable  :(

I'd grow them seperately and with a gap of a couple of weeks between the 2 varieties so that they can't cross pollinate.

Yes, you are quite right to be concerned about growing different classes of sweetcorn together, as my experiments and published papers show that it can obviously affect texture, sweetness and starchiness. I have previously reported here on the results of my tests.
One of the problems is that few catalogs list the class of individual sweetcorn, but some google searches will help. Incredible is an older variety and is a sugar enhanced (se) mid to late season variety according to http://en.wikipedia.org/wiki/List_of_sweetcorn_varieties
Swift is an altogether more complicated variety and is early, Extra tender and sweet (tendersweet) or augmented super sweet.
Hopefully, they will not be shedding pollen at the same time.
You can grow different varieties of sweetcorn close to each other provided they are from the same group. If they are different coloured varieties, the kernels could be variegated, but the taste and texture should not be affected.
