Title: Chicken Legs with Cheesy Leek, Baby Corn and Mushroom Sauce

Another recipe I made up tonight using baby corn!!  I have loads growing now... all plants are givng me 3-4 baby cobs each!!

Chicken Legs with Cheesy Leek, Baby Corn and Mushroom Sauce

Ingredients
6 chicken breasts or thighs
2 cups sliced Leeks with loads of greens
1 chopped onion
1 cup sliced baby corn… (oversized is best for the crunch..)
1 cup chopped mushrooms
3 cloves chopped garlic
1 teaspoon thyme
1 tablespoon oil
Small dollop margarine or butter
Salt & pepper
1 Lt.. white cheese sauce
 

Directions
Heat oil, butter and garlic in a large skillet for a couple of minutes. Add chicken and sauté with lid on for 10 -15 minutes, turning a few times.

Add leeks, onion, mushrooms, baby corn, thyme and a sprinkle of salt and pepper. Sauté / simmer with the lid on for 25 min. Turn and stir from time to time. Drain juices into fat separator jug and pour back the juices – discard fat. If juices run out add a bit of water..

Make the white cheese sauce.. conventional or packet… thicken with flour.

Add to chicken and simmer for 5-10 minutes. Stir a few times to stop the sauce from sticking.

Serve on a bed of rice….
