Thanks Foghorn  my berries are in the jelly bag at the mo so will try that method later  :D

At HamsterGBert Towers it has been known for crab apple mush to be filtered through a fairly close-weave cotton tea towel when the jelly bag is otherwise occupied, with quite satisfactory results.

However even after an overnight there always seems to be a lot of liquid that can't make it through the jelly bag, muslin sheet or teatowel so I generally end up doing what all the purists insist should never be done and I give it the ol' Spanish windlass squeeze, often to the point where the pulp left behind is solid enough to be tipped out in one cohesive lump!  Seem to have mostly got away with it thus far.

I never thought to use a clean teatowel for the apples.  I just did the elderberry one day/night then the apples the next whilst the elderberry waited in a nice clean empty squash bottle.

Interestingly though I'd got some elderberry juice left that I hadn't used and I had left it a few days whilst I decided if I was going to use it or not.  I decided not and asked my other half to tip it down the sink today as he was closest.  I'm glad it wasn't me as when he took the lid off it just exploded!  Elderberry juice everywhere and as you can imagine, it's a beggar to clean off!  Whoops...  :unsure:

Going to have ago at the end of the week the rosehip and apple jam set well.

I use the juice for jelly then the left over pulp goes through the seive and into some type of jam or chutney. Blackberry, hedge row, matrimony, rose hip etc.


Leaving just a few pips and fibrours bits in the seive. Saves lots of peeling and coreing ect.
and very little waste.

Mine got made today , its well nice.

Its set lovely in the jars to  :D

With the elderflower champagne thats two things ive done with elderberrys this yr  ;)

I took a jar into work for a workmate who "wasn't sure she liked elderberries".  She's now a total convert and the jar is sat in the office fridge for her to spread on her toast every lunchtime this week.  Job well done I'd say.  :)

I've got my eye on some elderberries, so was looking for a jelly recipe and found this old thread  :)

I wondered if other people might fancy making it as well, as there seem to be a lot of elderberries this year  :)
