Some of my onions gone to seed.

I have grown the Japanese variety and whilst they are not massive they are adequate. A couple of them have gone to seed. Can I still use these?

Yes, but use these first, they won't store.

The flower stem will easily cut out
Did it really tell you to do THAT on the packet?

as above.

However, onions do freeze very well when chopped up before freezing, so for sauces, casseroles, curries etc, using the frozen onions gives no discernible change in flavour.

I thawed some I had simply halved from last year's harvest of those that had bolted and roasted with the meat last night - they were lovely and caramelised up beautifully.

(Frozen are not great for use in salads as they do go a bit mushy once thawed but cooking with them is perfect)
