How much water?!
« on: June 18, 2011, 20:03 »
Gammon Joint from a well know supermarket. Uncooked weight 1.125kg  Roasted in the oven (170deg) with 250ml of water, covered in foil for 1hr 10mins.

Does anyone want to guess the cooked weight.

I'm going to go lower, lower.  650g?
I try to take one day at a time, but sometimes several days all attack me at once...

But it's nothing unusual for any cooked meat to weigh a lot less after it's been cooked, it's normal.

Try weighing a joint or a turkey after cooking    and don't forget all the fat that runs out into the pan ;)

Your all very close - I was flabbergasted, must just be me.  ::)

I know theres a goodly amount of water in there and expected some weight loss. The final cooked weight was ...... 632g it shrivelled to nothing. (Stop laughing at the back ! )

Turned a nice joint of meat into something I've had to carve thinly so I could get 3 dinners out of it.  >:( None left for sandwiches or even for the chicken and ham pie I had planned.

Now I am laughing at that comment, sorry ....can't help it

3 dinners, sandwiches and some left for a pie from a starting weight of 1.125  ::)   :nowink:

Was I being optimistic MoS ? I thought Id get 3 good fat horizontal slices for 3 dinners, 1 thin horizontal slice for a sandwich tomorrow and then cut the the rest vertically into strips for the pie. I know I can be a little economical with meat but I thought Id got it covered.

I'm not suggesting we have to follow the guidelines, but I had a look at what a 'normal' size portion of meat was reckoned to be, for catering
It's about 120g per person ( which seems about right...a lb for 4 people was always the rule of thumb when I cooked for a family)
so in theory your joint should serve 5 people  ::)

Aside from that I think you were a tad optimistic, anyway :)
