Jerusalem Artichoke Reverse Whats-it Question

Hiya

I have Jerusalem Artichokes and they are now looking worse for wear and I am wondering how long after they start looking half dead are they ready?

I understand that all the goodness goes back down the stem and into them tubers causing them to swell, but how long does this take from when they start to look dead and straggly?

Usually any time soon if we'd had a cool autumn (we had our first real frost only yesterday so later than usual)

You can try and lift a few tubers while not disturbing the rest of the plant and see if they are big enough to use.  I have to confess I don't actually remember waiting for plants to die back - one minute they are green, next tall twiggy things which I've lopped back when untidy but that could be because they are not a crop I bother with too much - they have their own permanent bed right at the back of the plot and out of my way until needed

I've been using them for a few weeks now, I cut the stems down to 2ft so as to mark them in the soil over winter (have already done this).  Then you can stick a fork in to loosen under (I have heavy clay in the back garden), pull up one short stick dripping with tubers, leaving the others in the soil.  Then re-firm ground until you next harvest.
I just wash and use- if they are new out of the soil they don't need peeling.

I use the cut down stems to lay over overwintering crops to keep the frost off.
