Spaghetti type sauces

Hi All,

I would like to try to make jars of spaghetti sauces this year using home grown tomatoes, peppers etc. ( you know the brand ones you can buy which I cant mention - which have extra garlic/extra veg etc)

 Has any one done this and how do they store.  Surely if I do the usual sterilising of  jars, cook the sauce and then  put it into jars, the jars should seal and the sauce keep for quite a  few months.

If any one has experience of this I would love to hear from you.  Any one with a recipe would also be welcome.

They only last a few weeks like that. You need to boil the jars up like this

to make sure you have a really good seal.

done this way they last till the next toms ripen ;) I've only had one jar that didn't seal very well, and that was because it had a drip of sauce caught in the jar thread, so it was my fault :(

As for recipes I make them up as I go along, but usually manage to get rid of some of the courgette glut ;)

I'm too lazy to do that, so I chop my tomatoes and chillies etc up, freeze in bags, then make up the sauces as I want them.

Sometimes I make passata, but that is also frozen if I have room in the freezer!   :)
