My Special Waldorf Salad !

I thought I would make a Waldorf, but didn't have the correct ingredients, so here is what I made instead.

This is all very approximate:-

2 x carrots, chopped finely.
2 x sticks celery chopped finely
1x eating apple, chopped finely.
Some UNSALTED peanuts
Some Raisins
1 x teaspoon lemon juice
a good blob of Mayonnaise
a good blob of Salad Cream.   The last two are both 'light'
Black pepper (to taste)
A good lump of Cheese, grated (Mine was cheddar with chives)    This is not very precise, I just mixed it all together in a bowl until it looked right.   I guess you could actually utilise anything else you may have or fancy.    It was very tasty and I did make a second bowl.
It takes a long time to eat because you have to chew it a lot.    Enjoy,  regards,   Mrs Bouquet

I make something similar without the mayo - a Greek-style chopped salad.
All chopped to about the same size tomatoes, onions, cucumber, celery, carrot, crispy lettuce (or cabbage in the winter) pine nuts and cheese (feta?) all tossed in honey/mustard/oil dressing. Just now I'm using Trashco's healthy living one, which I quite like :)

Like you say, salads like this take a while to eat so you feel full :D
