Using honey instead of sugar for cakes
« on: July 21, 2008, 20:24 »
Our lil' ladies have been ever so busy and as a result we've got lots of honey (with even more to come in the next few weeks!!!)

In every bee article we've read, they all say that you can use honey instead of sugar but does anyone know if it's a 1-to-1 swap and what about consistency etc.

I'm thinking, in particular, of a victoria sponge type cake - do I just replace the 175grams of sugar with 175grams of honey?

If so, won't it be a bit too sticky and gooey?

Any advice would be gratefully received as we are keen to do our ladies proud  :D

is your honey plane flavoured , why I'm asking is we bought some chestnut honey which is dark and tastes wonderful but is a bit strong to cook with so it just goes on yogurt at the moment .
