I'm taking the top grass off where I'm going to grow vegetables and I'm going to turn it over but I have thousands of grass micro roots in the soil I will be for ever pulling this out how is the best way to get rid of this

After you've removed the top grass, dig it over and remove as much root as you can, leave any remaining roots to re-grow while the weather is still mild then cover it over for winter to help kill them off. Next year you will still get grass re-growing plus seeds germinating but you can use weedkiller to remove them, hand-dig them or plant through weed-suppressant membrane.
I work very hard so don't expect me to think as well.
