kale glorious kale but whatto dowith he surplus

I add it to soup every day and like it fried with onion. i keep trying to give it away but every one says they don't like it. Any ideas vegetarian please

I have frozen a load to use in soup and bubble and squeak. Best thing on earth for b&s.

Also google kale pasta recipes, there are loads of those.
I use it in place of spinach too, so things like lasagne, cannelloni and as an addition to cheese soufflé are good.    :)

Put left over cooked kale into veggie burgers/cakes or whatever you want to call them.  Bit of fried onion (garlic too if you like) mashed potato/sweet potato/swede/parsnip (again whatever you've got left over) add some grated cheese, season and put in herbs, spices or anything you like in that dept.  Bind with an egg.  Mix well, coat in seasoned flour and shallow fry until cooked.  Great as a light meal especially topped with a fried or poached egg.
