Chilli's - ideas

Afternoon all

First time I've grown chilli's, and I've got a few of them, so looking for some recipes and ideas for making up some chilli sauces/oils etc if possible please

and any other recommendations that people may have for using them :)

It really depends on what type you've grown. I did a large jar of pickled jalapenos at the weeked for sandwich and pizza toppings - I wouldn't do that with a Naga though  :lol:

I grew baket of fire this year, I didn't know they were simple  :ohmy:

I don't really eat chillies but by boyfriend added one to his dinner last night and they were so hot his eyes were watering!  We've still a few in the freezer from last year (Super F1 and Hungarian Hot Wax) and they are getting hotter as they are stored :wacko:!

chilli jelly is fantastic and really easy - just apples, lemon, chillies and sugar. I add chopped chillies afterwards and turn the jars as they cool so the bits are suspended. I make about 20 jars and give away 15.

I freeze a lot too, either chopped up or on their own.

Chilli flakes, chilli sauce, Harissa paste

Put one or two in a chilli or a curry, not to mention on your pizza, in your bread, stir fry, pasta sauce. Oh anything really is improved by a bit of chilli  :tongue2:

I'm making a batch of thai green curry paste with mine :-)
My husband's a water sign, I'm an earth sign, together we make mud :-)

Chilli oil is easy and useful for pepping things up. Just roughly chop and drop into a bottle of olive oil so they take up about 1/4 of the space. Leave for a few months and then drain into a fresh bottle.

Dry some out in a low oven (50C), then break them up and put in a pepper mill (seeds 'n all). Great for grinding over all sorts of things :)

My golden cayenne are struggling to ripen, and the green, unripe ones are not spicy at all. So I had left some on the window sill (with the ripening tomatoes) and they have turned a lovely yellow colour. Added one to a curry last night and it nearly melted my teeth...

This is my favourite, given to me by our friend Biscombe, who we don't see on here much any more. 

In fact I have a quadruple quantity cooling down in the kitchen now!

It comes up a bit too sweet, but I have reduced the amount of salt and sugar today.  Lovely in a cheese sandwich, or added to other dishes whilst cooking to 'pep' them up a bit!
