Title: Ginger wine

What with Christmas strolling up to us, I was wondering about ginger wine.
has anyone here got a good recipe?
I heard some one once say that it used a little lemon/orange peel. :D

Everything I have, I assume, takes a year to be drinkable.
Two have lemon+orange in them.
Another uses essences, water, sugar and yeast :shock:  :shock:

Are you thinking of a wine or a cordial?

One's that take 9-12 months to mature are plentiful.
For 2-3 months a bit more restricted, most appear to use 1/2pt brandy to reduce the time. The recipe in a book I have needs this.
