Coleslaw recipe- green cabbage?

I looked up a few coleslaw recipes on 'tinternet, they all state using white cabbage.

I have around thirty cabbages growing on my plot but they are all green cabbages (sorry, cant remember the variety). As we all love coleslaw in my house and I was planning to make loads with all the excess from the plot, is it ok to make coleslaw with green cabbage?

Anyone got a coleslaw recipe that includes green cabbage?

I use any cabbage for coleslaw, but make sure i use the crisp inside leaves.
So just use any recipe, mine is....
slice finely any cabbage leaves i have, slice finely any kind of onion i have (this includes leeks)
grate carrots over. Mix, add a little salt and pepper and a little white vinegar (no difference in taste to brown...just looks nicer ::)) Add whichever dressing you fancy...mayo, salad cream, oil and vinegar, or honey and mustard dressing. (nice if you add a little curry paste to mayo as well :lol:) Stir well and taste, sometimes it tastes a little bitter, if it does i sprinkle with a pinch of sugar which seems to help. Then leave a while for flavours to mingle.
So you see you can really do anything you like with the recipe. :)

And, if you don't like vinegar (like me - and all of those dressings have them in) use natural yogurt and a splash of lemon juice ;), lower in calories as well

Coleslaw is great with red cabbage too

Very thinly sliced swede or even grated swede will do to replace the cabbage too

Yes, i must admit when i gave some greek friends a swede i'd grown, they grated it for salad to go with barbecued meat, and it was lovely :)
