Pickled eggs are very easy Daz  :) - just peeled hardboiled eggs with pickling vinegar poured over.  If boiling up the vinegar with spices seems too much work, you can buy pre-spiced vinegar.

If sterlising the jars in the oven is a problem, you could get some cleaner\sterliser powder from a homebrew shop.  My local Tesco has a home brew bit, next to car care for some reason , but they stock all the basics  :)

Sorry  ::) forgot to add, the jars, eggs and vinegar are all cold when you put it all together, so no messing with boiling pans of vinegar and hot jars  ;)

Even easier. Just use whatever vinegar you have. White, brown, home brewed condiment. I use Milton to sterilise all my jars for any sort of jam, pickling etc and never had any problems with contamination. Simple and quick.

so just boil eggs, let them go cold, put in a sterile jar and add spiced vinegar, that sounds way to easy.
many thanks

I know this might seem like a daft question but what would the result be if you pickled the boiled eggs with the shells on?

Would the vinegar permeate through the shell?

Chillis are a great addition, if you like a bit of warmth.

I seem to recall from school science experiments that the shell dissolves probably taking out the acidity of the vinegar and leaving it no good as a preservative.
I could be wrong as it was a loooooong time ago ! :)
