Raspberry Mousse

I have sheets of gelatine, raspberries, eggs and cream.

Any ideas how I make this into a raspberry mousse. Potentionally LOL.
I was going to follow my tried and trusted goodhsking book from the 70's but it askfor half and ounce of gelatine, I don't know how to translate that into sheets of the gelatine I went and bought.

Gelatine sheets say four sheets make one pint.  Its supercook select fine leaf gelatine, couldn't find the powdered stuff.

All very helpful thanks.  Conversions brilliant.  There is an egg in that recipie sloegin so I'll go with the flow, and just the recipie I need.

I wish I hadn't read what gelatine is made of though LOL I kinda knew but conviced myself it was made from arrowroot.  I know they do another version of gelatine but I won't be looking, I'll just use the one I got.

oh ps stupid question is whipping cream called so on the pot or is called extra thick cream.  I used to know all this when the kids were little and I delved into cooking more.

Whipping cream usually says that on the pot.  It has less fat than double cream but can mostly be used in recipies that call for double cream, and it will whip  up just the same as double.  I like whipping cream better than double.
Pouring cream or single cream has the least fat but will not whip.

The vegetarian one is Agar Agar Sheila.  I used to use it for things when we had our vegetarian catering trailer in the 90's!   It's made from seaweed I think, but it was a long time ago.

Just googled, its made from red algae!!  I'm sure it said on the packet though that it was seaweed!

No probs, there's also extra thick double cream it's ok to serve with say apple pie etc but not for cooking with. I always use double cream to whip.  :)
