Storing beetroot

Storing beetroot

My beetroot are a good size and the critters have taken to eating them.  So I need to get them up and into store.  Apart from freezing and pickling and chutneys, how do you store them?  Can I just take the tops off, dry them and put them somewhere dark and cool or will the go leathery and/mouldy?

basically the same as you mc  I know the old generation of gardeners that didn't have freezers stored there beet in sand and as I understand they stored well but I've never tried this method because we always put our beet in the freezer
